Grilled shrimp stuffed avocados
Here is an awesome easy and healthy recipe to enjoy in the waning days of summer
Avocados are a ready-made vessel to just fill with all your favorites…ours is our favorite grilled shrimp, w/fresh mango, cilantro and Persian cucumbers.
- 2 Persian cucumbers sliced
- 4 large ripe avocados halved lengthwise and pit removed
- 1 lb. of fresh shrimp 21-30, peeled/deveined
- 1 bunch fresh cilantro
- 2 ripe mango-cubed
- 2 Fresh limes-to squeeze fresh lime juice over finished avocados.
Marinade the shrimp in your favorite ready-made marinade or simply use EVOO and salt and pepper and set aside for about 20 minutes.
Grill shrimp to perfection…just a minute or so on each side.
Toss warm shrimp in a bowl with the fresh mango and cucumbers. Season with salt and pepper to taste. Fill the avocadoes with the shrimp mixture and squeeze fresh lime juice over the top. Garnish with fresh cilantro leaves and serve,
